I believe there is a large market for:

Attorney website.
They have among the worse sites on the web. This template should be very simple and elegant. Should not take long to make.

Resort website
Golf Resort, RV Resort, Hotel Resorts, Beach Resort. One template that can be tweaked to fit all the above. Not a travel agency type. I know you have that.

Veterinarian website
Simple site for vets to promote their business.
